In cooperation with Bonne Bay Cottage Hospital, I’m offering a workshop on Bottling and Preserving Soup. Warm up with some soup from the pantry. We’ll talk about the science of the ingredients and the purpose of adding some preservatives and thickening ingredients. We talk about the temperature controls and processing in low acid conditions. We’ll discuss the key criteria so you’re soup lasts on the shelf or in your pantry as long as you expect (unless someone eats them first!). I’ll also touch on what to look for to know when it is no longer good.
